You fill in the blanks. I don't know what it is like where you are waking up this morning, but it was 104 degrees here yesterday and expected to be 101 degrees today! When it is this hot I have NO desire to do anything but float on the water and drink. Pretty obvious what I will be doing this weekend. So, to kick off the weekend, here is a great cocktail recipe to keep you cool.
3/4 ounce of fresh lime juice
2 ounces of premium gin
3/4 ounce of simple syrup (see recipe here)
sprig of mint
fresh raspberries or strawberries
Fill a cocktail shaker with ice. Add the gin, simple syrup and lime juice.
Shake until chilled, then strain into a flute.
Top with Champagne and garnish with the sprig of mint, fresh raspberries or strawberries
Another option is to serve over ice with a spig of mint, fresh raspberries or strawberries.
Also, if you don't feel like cooking, here is a recipe for a light, refreshing salad.
Shaved Zucchini Salad
3 tablespoons extra-virgin olive oil
1 teaspoon finely grated lemon zest
1 1/2 tablespoons fresh lemon juice
Salt and freshly ground pepper
2 pounds small, firm zucchini, very thinly sliced lengthwise on a mandoline
1/3 cup shaved Parmigiano-Reggiano cheese, crumbled goat cheese or dollops of ricotta cheese
3 tablespoons raw pistachios
In a small bowl, whisk the oil with the lemon zest and juice. Season with salt and pepper.
In a large bowl, toss the sliced zucchini with the lemon dressing. Add the cheese of your choice and the pistachios, toss again and serve.
